  • Homogeneous heating:

    Microwaves and radio frequency heat the entire mass of the product directly and homogeneously, which is called “volumetric heating.”

  • Fast and even heating:

    Microwaves and radio frequency have the ability to heat thanks to the dielectric loss properties of materials. This phenomenon is due to the vibration and rotation of the polarized molecules inside the material, induced by the rapid reversal of the polarity of the electromagnetic field (one million times per second).

    Heat generation is almost instantaneous and allows a perfectly controlled process thanks to rapid and uniform heating. Additionally, almost all of the energy is transferred to the treated product, dramatically reducing energy losses.

  • PSelective properties

    Thanks to the polar properties of water, microwaves and radio frequency can heat wet materials very quickly. Specifically, they have the ability to evaporate water quickly and selectively from many materials. This is because water molecules are highly polarized, more so than most substrates on which they are typically found.

    This property is used in many fields, including the food industry and industrial heating in fact, anywhere where drying is involved.

    Good conductive materials, such as metal, are usually not passed through or heated by microwaves and radio frequencies, since they do not have sufficiently large dielectric losses. For this reason, most microwave equipment is made of stainless steel, which perfectly blocks radiation, while offering excellent durability and cleanliness.

Reduced production times in pasteurization, heating, cooking and thawing of a wide variety of products:

In the particular case of pasteurization of dishes prepared by microwave, for example, by applying said process to a bag of vegetables it is possible to reach temperature values with the desired pasteurization capacity much more quickly than with a conventional thermal process in an autoclave, even achieving more of a double pasteurization factor in a quarter of the process time. Similarly, a continuous industrial microwave equipment can obtain the required pasteurization value for a prepared dish in just 15 minutes, while about 105 minutes of treatment are needed through a thermal process.
